Casa Bonita

Built for spectacle, not subtlety

Restaurateur Bill Waugh opened the Lakewood, Colorado, location of Casa Bonita on March 25, 1974, bringing a concept he had already built out in Oklahoma, Arkansas, and Texas. The centerpiece was a working cliff diving show, divers leaping roughly 30 feet into an indoor pool meant to evoke Acapulco, dug deeper than originally planned so the dives would work. Strolling mariachi bands, a puppet theater, and a mock cave system wound through the dining room around them.

A cartoon kept it alive

South Park co-creator Matt Stone grew up eating there, and the show's 2003 episode Casa Bonita turned the restaurant into a cult reference point for a generation who had never set foot in Colorado. When the real Casa Bonita closed during the pandemic and its owner filed for bankruptcy, Stone and co-creator Trey Parker bought it themselves in 2021 rather than let it disappear.

The reopening

Parker and Stone spent more than 40 million dollars restoring the building rather than tearing it down, and Casa Bonita reopened in 2023. The kitchen was taken down to the studs and rebuilt, the cliff divers returned to a reconfigured pool of the same size, and Black Bart's Cave came back with a clearer storyline. Demand was severe enough that an online reservation queue stretched into the thousands and later booking windows sold out within minutes.

Reservations are required and are made only through casabonitadenver.com/reservations; the restaurant takes no walk-ins. A credit card holds the booking, and nothing is charged in advance. Canceling less than 24 hours ahead, or not showing up, costs $10 per person. Parties are limited to 10 people, and babies and toddlers count toward that total. New dates are added on a rolling basis, so a day that looks full can open up later.
